Our October \’24 Makers is a left handed short slicer. This high-carbon steel, \”Tanto\” style slicer with \”Hamon\” was crafted in a limited batch of only eight individually numbered knives. The Hamon line is created by applying a special clay paste to the spine of each blade, resulting in a unique difference in hardness between the covered and uncovered areas. After a great deal of polishing, this process produces a faint white line along the blade and a subtle contrast between the two sections, with a harder edge and a softer spine.

With a 200mm blade length, a narrow profile and a super thin edge, this knife is designed for precision slicing and portioning of medium-sized products, particularly fillets of fish and meat, in a single, fluid motion. The Tantos single-beveled edge, combined with the high-hardness carbon steel, allows for clean, even cuts while minimizing friction and tearing.
